EAT | Apple Butter

DOWNLOAD RECIPE HERE: Apple Butter

INGREDIENTS
• 6 apples (5 red, 1 green)
• ¼ cup packed brown sugar
• 1-2 tsp vanilla extract
• 2 tsp ground cinnamon
• ¼ tsp salt

DIRECTIONS
1. Peel all but two apples (peeling the green one). Chop into ½” pieces at most.
2. Place apples and remaining ingredients in a slow cooker and cook on low for about 7 hours. Stir every hour or so (does not have to be exact).
3. When apples are a deep caramel color, you can leave rustic in texture or process until smooth in a food processor (my preferred way).
4. Store in air tight container in refrigerator for up to 2 weeks.
5. Enjoy on toast, waffles, etc.

Meg grew up in Connecticut and when she wasn’t busy pretending to be a mom, she was in the kitchen learning family recipes. She won over her husband, Alan, whom she met her freshman year at Stanford, with some very fancy homecooked meals. After working in finance and strategy for Gap and NBC-Universal, Meg returned to Stanford where she earned her MBA. Now with three kids of her own (Avery, 5; Brooks, 4 and Ryder 1), Meg’s husband doesn’t see too many of those fancy meals. But her kids eat very well! She believes good food is all it takes to make a friend, and she is grateful for all the friends she has made through her videos.

  1. Okay, I got a little inspired by this today. Seven hours in the slow cooker, and it turned out amazing. Thanks, Meg, for another wonderful recipe! Can't wait to have this on my toast in the morning.

  2. I literally threw the ingredients in my crockpot yesterday while watching this video! It turned out amazing! It made exactly enough for a 1 pint mason jar. I used my immersion blender right in the crockpot and it came out nice and smooth. If you want to make one for yourself and one for a friend, double this recipe! Thanks for the recipe Meg!

  3. For anyone without a slow cooker, you can try cooking it in a 250 oven from about 2.5-3 hours. Or you can cook on VERY low heat on the stove, partially covered for about 1.5-2 hours.
