Some kids love salad, others not so much. But what kid doesn’t like a good rainbow? With this rainbow salad, you can mix up the ingredients to include fruits and veggies your kids like. It’s all about getting that vibrant variation in your rainbow.

INGREDIENTS

  • 2 cups baby kale
  • ½  cup cubed watermelon
  • ½  cup orange peppers slices
  • ½  cup yellow cherry tomatoes
  • ½  cup blueberries
  • ¼  cup sliced red cabbage
  • 1-2 TBSP olive oil
  • 3 tsp red wine vinegar

DIRECTIONS
1. Toss ingredients together and dress before serving.
