EAT | Detox Salad (Easy New Years Recipe!)

Happy New Year! Kick off a year of healthy eating with this Detox Salad. So many nutritious ingredients in one bowl. Even Ryder approved. :)

INGREDIENTS (these ingredient quantities can totally be mixed!)
– 2 cups kale
– 1 cup red cabbage
– 1 cup broccoli florets
– 1/2 cup brussels sprouts, cut in half
– 1/2 cup carrots, roughly chopped
– 1/4 cup fresh parsley
– 2 tbsp roasted or raw almonds
– 1 Tbsp sunflower seeds
– 1/4 avocado

Dressing: 3 tbsp olive oil, 1/4 cup lemon juice, 2 tsp honey, 2 tsp fresh ginger

1. Chop veggies in a food processor.

2. Whisk dressing ingredients together and dress the salad! Top with nuts, seeds and avocado.

Meg grew up in Connecticut and when she wasn’t busy pretending to be a mom, she was in the kitchen learning family recipes. She won over her husband, Alan, whom she met her freshman year at Stanford, with some very fancy homecooked meals. After working in finance and strategy for Gap and NBC-Universal, Meg returned to Stanford where she earned her MBA. Now with three kids of her own (Avery, 5; Brooks, 4 and Ryder 1), Meg’s husband doesn’t see too many of those fancy meals. But her kids eat very well! She believes good food is all it takes to make a friend, and she is grateful for all the friends she has made through her videos.
