EAT | Breakfast Quesadilla (Make Ahead and Freeze Recipe)

If you’re looking for a way to have a delicious, hot breakfast even on the busiest of mornings, these Breakfast Quesadillas are the answer. Make them ahead, mix up the filling to keep things fresh, freeze and cook in the morning.

INGREDIENTS
– tortillas
– scrambled eggs
– sausage (or turkey bacon, etc)
– shredded cheese (I used a Mexican blend)
– avocado slices for the top
– Optional: spinach, broccoli, any typical omelette filling

DIRECTIONS
1) Place tortilla on plastic wrap. Fill one half with eggs, sausage and cheese (being generous with cheese).

2) Using plastic wrap, fold the tortilla in half and wrap. Store in freezer.

3) When you’re ready to eat, you can either thaw in refrigerator overnight OR microwave at 50% power for 1:30. Cook your quesadilla at 350 degrees for 6 minutes per side OR cook in a greased skillet.

4) Top with avocado (and any other toppings you like). Enjoy!

  1. Love the idea if fresh maybe with ham instead…but frozen and then reheated up eggs? Still love you guys though. Sending lots of love, smiles, and hugs!

  2. Life saver!!! I just recently discovered I have an egg allergy:( I've been trying to find more savory alternatives and this is it! I can mix up the ingredients and omit the egg

  3. My kids love these and my son calls them "Candy Quesadillas" because they are better than candy! We've made them camping and everytime we are with a big group at a beach house or just for every day breakfast for the family before school! Love them.

    For a yummy twist, we buy Indian Methi Parathas which are spiced Indian flat bread that is flakey and buttery from the indian grocery store and use in place of tortillas. YUMM!!!

  4. i'm not a mom and i'm not 12 years old! i'm a 15 y/o that just needs to have something to eat for breakfast and lunch and this is perfect as a student in highschool!!
