EAT | Buddha Bowls 3 Ways

A cousin to Burrito Bowls, Buddha Bowls are an awesome, easy dinner (or lunch). Prep them ahead, mix up your toppings or better yet, have your kids create their own.
Curry Yogurt Dressing:
1. In a food processor, blend 1/4 cup low fat greek yogurt, 2 tablespoons light mayonnaise, 2 tablespoons apple cider vinegar 2 teaspoons curry powder (or more, to taste).
1. In a food processor, blend 1/2 cup fresh basil leaves, 1 clove of garlic, 2 tablespoons pine nuts, 1/2 cup extra-virgin olive oil, 1-2 tablespoons lemon juice, salt and pepper.
